The consumption of bottled waters increased remarkable in the last years and, according to the evaluations, it is foreseen a further considerable increase.
Though surveys carried out on consumers belonging to specific market segments, it was possible to analyzed the consumption trend and the motivations inducing to prefer this product instead of tap water.

PROTEOMIC APPROACH IN CHARACTERIZATION OF DONKEY’S MILK CASEIN FRACTION

Donkey’s milk has become a potential and attractive substitute of infant formulations when breast-feeding is not possible and particularly suitable in the dietotherapy of patients affected by cow’s milk protein allergy. In this work the presence in donkey’s milk of four casein families and the molecular characterization of αs1 and β-CN are reported by means of proteomic approach based on combined use of immunoelectrophoretic (one and two-dimensional gel electrophoresis) and mass spectrometry techniques. The occurrence of a high heterogeneity of casein fractions was observed, due to post-translational phenomena, both phosphorylation of αs1, αs2 and β-CN or glycosylation of k-CN. On the basis of structural data, donkey αs1 and β-CN consisted of 197 and 226 aminocids, respectively.
