FIRST SIGNALING OF HIGH CONTENT OF HISTAMINE IN MISSOLTINI (ALOSA AGONE)

For the first time, the presence of high concentrations of histamine in missoltini, typical products of Lake Como has been reported. Also indicated are the results of the microbiological analysis carried out on fresh fish, Alosa agone. Some bacteria have shown the potential to produce biogenic amines.

A MULTIPLEX PCR FOR THE SIMULTANEOUS DETECTION OF BOVINE AND PORCINE DNA IN MEAT PRODUCTS

During the last decades, many techniques for food authentication were applied. This paper describes the application of a multiplex PCR for simultaneous detection of beef and pork. The development of this molecular technique was achieved by use of DNA admixtures containing different shares of both species. The identification of animal species used in an industrial meat product was also described.

R&D PERSPECTIVES FOR THE FOOD INDUSTRY

Research and development activities have become a strategic asset for the food industry. However, for most of the food enterprises access to R&D is prevented for cultural reasons, even before for economic ones. To overcome both knowledge and economic barriers, a new partnership strategy between food enterprises is essential to be developed.
